Slow Food´s bi-annual event of Terra Madre brings together food communities all over the world, s... more Slow Food´s bi-annual event of Terra Madre brings together food communities all over the world, some of which form part of the Ark of Taste and Presidia projects that point out foods or techniques that may present a potential risk of extinction due to the globalization of the food system. In Mexico, the Slow Food movement and organization has been either praised for its postmodern approach to food sustainability or attacked for gastronomic commoditization. This article analyses these dichotomies in the context of Slow Food Mexico, where this movement began in the late 90´s and grew for more than a decade within the sphere of gourmet restaurants. With the methodology of an institutional ethnography, by interviewing Slow Food staff in Mexico and Italy, this paper will discuss the sudden growth of the Mexican delegation to participate in Slow Food´s Terra Madre event in 2014, while reflecting on how an ecogastronomic framework with the intergenerational, multicultural and interclass approach may develop strategies to create food resiliency within urban and rural areas in México or other countries with a Slow Food organization.
