Its implementation and integration by lecturers and students are lagging behind though it is increasingly seen to have an important role to play by extending and enhancing learning opportunities for the students. The study was therefore initiated to look at the extend to which ICT is being used in teaching and learning in Tamale Technical University and also find out the reasons for their ineffective use by some students which brings about disparity in computer usage in the institution. The study revealed that the males use the computers more than the females. The technological application in the educational delivery has not also been well integrated into teaching and learning especially by the Hospitality and Tourism Management Department who are predominantly females. Lack of access to computers is one of the major causes of this digital disparity. Most of the females also perceive negative notions like fear of damaging the computers when it is being used by them. Instructors and the female students are therefore faced with lots of challenges which are hindering their effective use of computers in teaching and learning. The implementation and integration of an ICT-enabled system among students in the Tamale Technical 2 University would therefore require management to come out with a strategic plan and clear policy to guide its integration to benefit all groups of students.

This study assessed the challenges that bread makers encounter in their operations in the Tamale ... more This study assessed the challenges that bread makers encounter in their operations in the Tamale Metropolis of Ghana and made recommendations for improvement of both production and consumption. One hundred and twenty five (125) respondents were selected for the study. The findings revealed that changes in weather, differences in baking duration and the ability to monitor the oven temperatures during baking are some of the challenges faced by bakers in the Tamale Metropolis. It was concluded that even though bread offers a positive effect on the human health, consumers must take more whole grain bread as it is healthier and contains some essential nutrients that are lacking in white bread. Bread consumers should reduce their consumption of white bread and rather take more whole grain bread. The study also recommended that manufacturers add iron to bread through the process of enrichment to account for the losses during the baking processes. Bread bakers in the Tamale Metropolis should also adopt effective customer relationship marketing with their consumers.

The vegetable industry in Ghana merits much attention as it provides quick returns to investment,... more The vegetable industry in Ghana merits much attention as it provides quick returns to investment, generates relatively higher annual revenue and an assured way of improving the livelihoods of farmers especially women. A descriptive survey design was used for the study and stratified proportionate random sampling method was used to select 221 women farmers in three districts. Results of the study revealed that respondents generally had reasonable amounts of livelihood assets as a ‘whole’ even though farmers ‘disagreed’ financial assets was available to them. Furthermore, the analysis of variance revealed that there were significant differences between all the five assets except between natural and physical assets. The results of stepwise multiple regression analysis revealed that (1) the number of times vegetables are grown in a year and (2) area of land under cultivation were the best predictors of yield of women vegetable farmers. The research aimed at extracting cooking oil from sesame seeds which can serve as a substitute to... more The research aimed at extracting cooking oil from sesame seeds which can serve as a substitute to other vegetable oils in the market. Sesame seeds were cleaned, roasted then milled into paste. After which the paste was then mixed with boiling water and stirred thoroughly until oil was skimmed. The oil was heated for water content to evaporate then allowed to cool down, after which it was then bottled and labeled. The oil was evaluated through sensory analysis with 30 randomly selected students and lecturers of the Hotel Catering and Institutional Management department of Bolgatanga Polytechnic in the Upper East Region of Ghana. The oil extracted was used to prepare titbits which were used in determining the taste of the sesame oil by the respondents. From the analysis, it was deduced that all the characteristics of the sesame oil was liked by majority respondents and therefore will gain much patronage when introduced into the Ghanaian market. The use of sesame seeds in the extraction of cooking oil will help improve the health condition of people more especially Ghanaians due to its health inducing properties (lignan present) and also its being a pure natural product.

This study assessed consumers' knowledge on the nutritional value of bread and its effect and the... more This study assessed consumers' knowledge on the nutritional value of bread and its effect and the challenges that bread makers encounter in their operations. One hundred and twenty five (125) respondents in the Tamale Metropolis were selected for the study. Twenty (20) of the respondents were bakers and the remaining were consumers of bread. The findings revealed that majority (78%) of the respondents agreed that bread was a good source of bran fiber and can help maintain a healthy weight. It was concluded that Special attention should be given to the quality of break at formal events since it impact the perception of entire events. Bread offers a positive effect on the human health due to the presence of many important nutritional components such as dietary fibers, minerals and vitamins and should be part of human meals taken periodically. There is also the need for bakers to identify the importance of ensuring that efforts are made to get their services right and prompt and also to meet or exceed consumer expectations in the delivery of their products.

This study examined the relevance of recapitalization in the banking industry. Specifically, the study investigates the basis for banks capital regulation in Ghana, assessed the impact of recapitalization on the performance of banks and identified challenges posed by the exercise to banks in Ghana. Secondary data were extracted from the banks and analyzed using ratio to measure the banks performance. The first phase, 2009 recapitalization is adopted as the base year, testing the performance of banks three years before the 2009 recapitalization exercise and a year after the 2009 recapitalization exercise to see the significance of the recapitalization. The study found that it is not all the time that recapitalization transforms into good performance of the bank and it is not only capital that makes for good performance of banks. The study posits that bank recapitalization exercise has significant relationship on the pre and post recapitalization profitability indices of the selected banks. The study recommends that there should be a critical look at the mode by which banks raise funds and that banks should be train on post recapitalization issues.

This study was conducted to find out the services quality of Wa municipal mutual health insurance... more This study was conducted to find out the services quality of Wa municipal mutual health insurance scheme operations in its competitive environment. The study measured customers' perception of service quality using SERQUAL instrument.The five dimensions of service quality, being tangibles, reliability, responsiveness, assurance and empathy, were used. Based on random sample of 398 clients and a survey instruments that measure the five dimensions of quality attributes, the result of the study revealed that the level of service quality in the WMHIS is moderate. Meaning the level of service they receive is lower than what they expect indicating there is no satisfaction. The findings show comparatively high customer expectations and the management involved is presently not meeting the expectations as significant quality gaps were found in the areas of all the five dimensions. In conclusion, the study suggests that efforts should be made to improve service quality in the WMHIS.
