Michelin2025、そして2026年も掲載され京都の日本料理界で確固たるポジションを築かれつつある要注目店『竹ざき』さんへ御盆以来、約四ヶ月ぶりに再訪させていただきまました。暖簾をくぐると竹崎店主のお出迎え。「外人のお客様が多く料理が少し滞り気味です」と状況を伺った上で靴を脱ぎ畳敷の客間へと足を進めます。L字型のカウンター席にはニ人、ニ人、ニ人の計六名の先客の御客様。二組の欧米系の先客と一組の東洋系の先客様と御見受け致しました。欧米人の御客様は御行儀が良く静かに酒盃を傾けつつ黙々と食事をされており全く気にならぬものの東洋系の御客様は「これ何ですか?これは?これは?」と竹崎店主への説明責め。成る程、そういうことで料理が滞り気味ということなのね。と状況を取り敢えず把握。自分の席はいつもの坪庭に最も近い左端の末席。隣には欧米人の品の良い先客様の隣。あの質問責めの東洋人の隣席ぢゃなくて良かったと胸を撫で下ろします。いつものとりビーは飛ばし京丹後産のササニシキで醸されたシャープでドライな口あたりの白杉酒造 銀舎利 特別純米酒 無濾過生原酒と料理は名残も名残であろう『こっぺ蟹』に千枚漬(センマイヅケ)を添え、たっぷりの柑橘(カンキツ)ジュレとともに味わうひと皿からスタート。丁寧に剥かれた『こっぺがに』の剥き身ともっちりとした蟹(カニ)の内子(ウチコ)とジュルジュルの外子(ソトコ)と異なる食味を口中で渾然一体化させ今期最後となるであろう『こっぺがに』の味を楽しませていただきました。向付には本鮪(ホンマグロ)の幼魚の『横輪(ヨコワ)』のトロにあたる腹身に『寒鰤(カンブリ)』、皮目を軽く焼き霜にした『鰆(サワラ)』に『平鱸(ヒラスズキ)』を割醤油(ワリジョウユ)と醤油(ショウユ)を使い分け味わいます。直前にすり卸された立派な太さの山葵(ワサビ)の効きが良く鼻腔の通りが良くなり使われている山葵(ワサビ)の質の高さも窺えました。向付の次には料理人の腕の見せどころの椀物には椀種には天然物の『本九絵(クエ)』、椀妻に芽蕪(メカブラ)、差し込みに金時人参(キントキニンジン)、吸口に柚子松葉(ユズマツバ)。吸い地は筋肉質の身にたっぷり付いた脂を引き立てるように『本九絵(クエ)』の骨出汁(ホネダシ)と鰹(カツオ)の一番出汁(イチバンダシ)の混合だしで吸い地の旨味が五臓六腑に染み渡ります。椀物に合わせられた三宅酒造の9/a『クエ』という酒を持ってこられニヤリと笑みを浮かべられた竹崎店主。控えめな竹崎さんの洒落な一面を魅せられた気がしたのでありました。更には扇型の織部焼の器に盛り込まれた椎茸(シイタケ)真薯(シンジョウ)詰め、叩き牛蒡(タタキゴボウ)、『舌切(アオヤギ)』のてっぱいの蓮根(レンコン)包み、黒豆(クロマメ)、筍(タケノコ)、田作(タツクリ)、菜花(ナバナ)、龍飛巻(リュウヒマキ)、鶏松風(トリマツカゼ)、鯖寿司(サバズシ)のお正月Versionの八寸代わりの旬菜盛合せ。いづれも丁寧に造られたものでしたが中でも『鮃(ヒラメ)』を塩で〆め龍飛昆布(リュウヒコブ)で巻き上げ作られた京の御節(オセチ)には欠かすことの出来ぬ『龍飛巻(リュウヒマキ)』は塩の回り等、分単位での綿密な時間計算の上に造られたであろうと感じられるものでした。箸休めには『赤貝(アカガイ)』と『泥障烏賊(アオリイカ)』のてっぱいです。芥子(カラシ)を強めに効かせた酢味噌和え(スミソアエ)で身体がシャキッとします。赤貝(アカガイ)の紐(ヒモ)のコリコリとした食感が佳きアクセント。赤貝(アカガイ)は香り高く鼻腔と味蕾を楽しませてくれました。油物には丸々一個使いの天然物の『鮑(アワビ)』の天ぷらに海老芋(エビイモ)の霰揚げ(アラレアゲ)。噛み込んだ歯を押し返すような弾力と柔らかさの中にもクニュっとした鮑(アワビ)特有の咀嚼感、口の中に広がる天然物ならではの滋味深い旨味が鮑(アワビ)好きには堪らぬ一品でした。輸入物や養殖物の鮑(アワビ)や一度フローズンにした冷凍あわびではこの味は出せません。この鮑(アワビ)の美味しさは本当にヤバかったです。締めの食事は土鍋炊きの白いご飯と信州産の月の輪熊(ツキノワグマ)を使った熊汁(クマジル)にごはんのお供に数の子(カヅノコ)に炙り鱈子(アブリタラコ)に実山椒(ミザンショウ)とともに炊かれた榎茸(エノキダケ)。食後の水菓子は二段構えで焙じ茶(ホウジチャ)のジェラートに桜餅(サクラモチ)、食後の飲み物は黒文字茶(クロモ゙ジチャ)や薄茶(オウス)等、数種類用意されている中から食後酒の鳳凰美田の檸檬酒(レモンシュ)で口内をすっきりさせひと通りとなりました。「京都市場は29日で年内の営業を終えられている上に正月期間で魚種も揃わず、更には値段が高過ぎて使えません。」と吐露された竹崎店主。確かに昼夜二回転させて百万単位の売上を叩き出される高級店の様に値段に糸目を付けず仕入るとは行かないでしょう。「魚が全然無くて申し訳ないです」と話されながらも名残の『こっぺがに』に天然物の『鮑(アワビ)』に釣り物の『平鱸(ヒラスズキ)』に天然物の『本九絵(クエ)』等を集められ組立てられたコース内容。正月料金で二〜三割増しぐらいで営業されている店が多い中、一万円台でこれだけのものを揃えていただいた訳ですから最大限のおもてなしをしていただいたと思います。八種類の日本酒を料理とのペアリングでマリアージュを楽しませていただきました。三日後にも既に予約を入れておりますが五日まで京都市場は休市。一体どんなものが振舞われるのか今から楽しみでなりません。
