2日寝かせた生地は、内側はもっちり、外側はサクサクと、
食べ進めるほどに食感が変化していくのが楽しい。
温泉卵とチーズが生地に馴染み、トリュフの香りもしっかり。
北海道産ランプのビステッカ(2,750円)は炭火焼き。
表面は香ばしく、赤身はやわらかく、肉の旨みをダイレクトに感じられる一皿。
三陸牡蠣のジェノベーゼバター添え(2,200円)、

魚介の旨みとソースのバランスが印象的。
