御盆休み前夜はJR盛岡駅から中心街へと続く開運橋手前の交叉点の左手に店を構えられる炭火焼やきとりの『とみふく』さんへ再訪させていただきました。店奥の逆L字型のカウンター席に席をとらせていただき先ずはサッポロの『パーフェクト黒ラベル』の生ビールで渇いた喉を潤しました。デフォルトで供されるつきだしはザク切りの甘藍(キャベツ)、今回は前回、気になった『新亀家』さん仕込みの料亭の味と謳われた『出汁巻き玉子(ダシマキタマゴ)』に秘伝のタレが自慢と言う『鶏(トリ)の唐揚げ』そして鶏(トリ)スープで味わう『鶏(トリ)スープ茶漬(チャヅケ)』を〆にいただくべくの訪問にてオーダーはその三品をタイミングを見計らいながら供していただきました。『パーフェクト黒ラベル』の生ビールは雑味もなくスムーズに喉を流れ胃袋へと落ちて行く美味しいビールです。そしてお目当ての『出汁巻き玉子(ダシマキタマゴ)』の焼きあがるタイミングで再び生ビールを追加。供されたソレはたっぷりの出汁(ダシ)を抱えた京風のふんわり柔らかなものではなく厚焼き玉子(アツヤキタマゴ)に限りなく近いもので具材にはフレーク状の『ずわいがに』の剥き身に浅葱(アサツキ)の小口切りの青み。たっぷりと添えられた霙卸し(ミゾレオロシ)に『佐々長醸造』製の早池峰しょうゆを多めに落とし染卸し(ソメオロシ)とともに味わいました。和風かに玉の様な玉子焼(タマゴヤキ)をいただいた後は揚げ煎餅(アゲセンベイ)が添えられた油淋鶏(ユーリンチー)風の『鶏(トリ)の唐揚げ』の登場です。鶏(トリ)もも肉に片栗粉(カタクリコ)を塗し揚げられた竜田揚(タツタアゲ)風の唐揚(カラアゲ)の上には薬味の浅葱(アサツキ)と白髪葱(シラガネギ)、その脇には檸檬(レモン)と特製のマヨネーズ。胡麻(ゴマ)風味の甘辛(アマカラ)の秘伝のタレが唐揚の味を昇華させているように感じられました。唐揚(カラアゲ)にはハイボールと思いつつも酸味の効いたレモンサワーでさっぱりといただき小腹を満たす為に〆は『鶏(トリ)スープ茶漬(チャヅケ)』です。供された茶漬(チャヅケ)は鶏白湯(トリパイタン)系のスープに錦糸卵(キンシタマゴ)に大根(ダイコン)の味噌漬(ミソヅケ)に椎茸(シイタケ)の具材に刻み海苔(キザミノリ)と胡麻(ゴマ)と浅葱(アサツキ)で風味と彩り添えされた一杯を胃にさらさらと流し込みサクッと締めたのでありました。会計は〆て3,930yen也。2,000yenは岩手旅応援プロジェクト『いわて応援クーポン』で支払い残金はPayPayで支払い。店内は『完全禁煙』の店で醤油は盛岡の多くの店で使われているサッカリン入りの甘っ足るい『藤勇醸造』製の醤油ではないところが個人的には魅力のひとつです。
