Chef"Tokinami in Yonezawa"
In October 1894, the Tokinowa Beef Shop was opened by the first owner, Shokichi Ozaki, in the Aramachi area of Yonezawa City. Back then, the beef selling season lasted from autumn until around June, when the snow that had been packed down in the northern warehouse during winter melted away. Now, in its fifth generation, Tokinowa is the oldest beef shop in Yonezawa, known for its commitment to quality and flavor. We take pride in being recognized for our consistent deliciousness, living up to the saying, "Tokinowa is in Yonezawa."
Chef"Commitment to Sourcing"
The fifth generation personally selects and procures the ingredients. Since 2015, Yonezawa beef has been limited to "unbred female black-haired Wagyu" and "cattle that are at least 32 months old," which has led to it being referred to even more as a mythical beef. By personally sourcing even better quality from this Yonezawa beef, we maintain a high standard of quality.
Food "Attention to Detail in the Dipping Sauce"
The characteristic roots of Yonezawa's sukiyaki can be traced back to the original Yonezawa beef sukiyaki, which is made using a secret sauce passed down through generations from the founder, incorporating miso into the traditional dipping sauce. Enjoy the unique richness brought by the locally sourced miso made from domestically produced soybeans as a hidden flavor. You can also enjoy this at the Tokiwa branch.
Food "Tokiwamiso Pickled by the Imperial Household Agency."
This dish is made using a base of local miso from Yonezawa, blended with a moderate amount of specially selected sake lees that Yonezawa takes pride in, and then aged to create a unique flavor. The Tokinokawa pickles were conceived in the late Meiji period when refrigeration technology was still underdeveloped, with the hope of making it available even in Tokyo, far from Yonezawa. Since its creation in the first year of the Taisho era, this exceptional product has been favored as a purchase by the Imperial Household Agency, helping to spread the reputation of Yonezawa beef.
