Food Freshly boiled soba made to order
Our soba is made with carefully selected buckwheat flour. The best way to enjoy soba is when it's freshly ground, freshly made, and freshly boiled. Since buckwheat flour can oxidize during storage, we grind it daily using a stone mill right in our shop. We then make the noodles on-site and boil them fresh for each order.

We carefully prepare our dashi every morning and evening without fail. This is because the flavor of dashi diminishes over time. We blend premium ingredients, including rich and aromatic bonito from our region, to create a dashi that truly stands out. This dedication to authentic dashi enhances the deliciousness of our soba and udon, making them even more enjoyable.
