Enjoying Vegetables: From Spring Greens to Summer Harvest
Living almost entirely on dining out, I often get asked, "What about your nutritional balance?" Interestingly, my body seems to crave what it needs. Recently, after consuming mostly "meat" and "noodles," my body finally cried out for vegetables. The photos showcase dishes made entirely from vegetables, with no animal products used in the seasonings or dressings—truly impressive!
Great for non-vegetarians too
In Japan, there is a traditional cuisine known as "shojin ryori," and I felt that this restaurant offers an evolved, cutting-edge take on vegetable dishes. Moreover, they have made great efforts to maximize the natural flavors of the ingredients, and I am sure that any preconceived notions about vegetables will be shattered.

This time, I accompanied a couple who opened a renowned meat restaurant along the Keikyu Airport Line. Since it was their first visit, they explained the concept and menu to us. The menu had already transitioned to "Summer Vegetables," which heightened our expectations. We ordered a wide variety of dishes to share, and it was a delightful experience. The reactions of our guest, who usually dislikes vegetables but loves meat dishes, were truly impressive.
