"Before the meal begins, we want you to experience the beauty of Japan's nature." This sentiment is reflected in our tables and art pieces. From the rings of the ancient Yakusugi cedar trees, which are over 1,000 years old, to our single-slab tables and handmade chairs, each piece showcases a unique character. Paintings depicting the mountains through the four seasons and flower art add seasonal color, with works by painter Takashi Kamo and Ikebana artist Ryota Hagiwara playing an important role in expressing the world of Karyon.
DrinkBurgundy-Centered Wine Collection
Our store stocks about 1,000 bottles of wine, primarily from the Burgundy region of France, where Chef Yamada trained. Most of the wines were purchased around 5 to 15 years ago, and many are now at their peak drinking condition. We pay meticulous attention to management, and the wines are stored in a healthy environment in our walk-in cellar located underground. During dinner time, our two sommeliers are always available to serve high-quality wines at the appropriate timing, temperature, and in the right glasses.

We work closely with many producers and suppliers essential to Karyon, including the pesticide-free farm "Sufida" in Shinshiro City, Aichi Prefecture, as well as Genji Wagyu from Higashi Mikawa, Mikawa Red Chicken, Aichi Hime Pork, seasonal vegetables from Karuizawa, and fresh produce from Iwate Town and Yamagata. Our partners at Toyosu Market, who provide us with seasonal seafood, are also invaluable to us. Together, we will continue to embrace the rich blessings of Japan and take on new challenges.
