As the eldest son of "Shojin Ryori Daigo," I began my training at Daigo at the age of 22 and have been the head chef since 2005. Since its founding in 1950, Daigo has been supported not only by people in Japan but also by those overseas, consistently earning two Michelin stars every year since the Michelin Guide's arrival in Japan. Leveraging my past experiences, I opened "Shojin Shuuko" in February 2015, where I offer traditional vegetable dishes using classic techniques in a more casual and innovative way.
Food "World-Class 'Shojin'"
Many ingredients that have not been traditionally used in shojin (Buddhist vegetarian cuisine) are often simply those that have not been incorporated due to preconceived notions. For example, truffles are a type of mushroom, so there is no issue with using them at all. While respecting tradition, we would like to propose a new style of shojin that incorporates new ingredients and techniques, making it accessible and enjoyable for everyone.

The design and concept work is being handled by Toshinori Kamiya, who has worked on many store designs, while the logo design and BGM selection are being managed by musician Yuhi Komiyama from Hofduran. Various specialists from different fields are involved in the artwork, collaborating with the concept of shojin ryori (Buddhist vegetarian cuisine).
