Born in Hyogo Prefecture in 1975. During his training period spent in a rural town in France, he learned a great deal from the simple and rustic meals and lifestyle of the French, which became a guiding principle for him later on. In May 2011, he opened "Bec." The French home-cooked dishes born from a thorough pursuit of flavor, along with a selection of wines chosen from a unique perspective, have garnered a reputation and made the restaurant popular. He captures the total experience of cuisine, space, and service, managing the restaurant alone while continuously pursuing his ideals.

Chef Kishimoto values the natural relationship between food and wine. He emphasizes the ingredients and takes great care to extract their flavors; for example, he simmers vegetable soup for about 10 hours and repeatedly roasts and rests the Hulgau family's Challans duck for about 40 minutes. Each dish is an exquisite creation that can only be savored at "Bec." Additionally, all the dishes are delicious even when cold, making them perfect for leisurely enjoyment as accompaniments to drinks. This can be seen as a point of pride for a bistro that is particular about its wine.
