The fourth-generation head chef of "Kawaki." Born into a family that has operated a restaurant while serving as shipowners of the Kitamae ships for generations. From a young age, he became accustomed to Echizen crabs, with Seiko crabs being served as daily snacks. He holds qualifications as a broker and only uses crabs sourced with a discerning eye. By adjusting the timing of chilling in fresh water and the boiling process according to the maturity and characteristics of the crabs, whether they are 18-year-old or 20-year-old, he can provide any crab in its best condition, thanks to his deep knowledge of crabs.

"Kawaki," located near Mikuni Port, famous for its fresh Echizen crab and sweet shrimp. Established during the Meiji era, it originally focused on river fish cuisine, but as boats began to venture not only into nearby waters but also into the open sea, it transformed into a restaurant specializing in Echizen crab. The traditional Japanese space, which evokes a sense of the long history and tradition accumulated over the years, offers four private rooms. At "Kawaki," which showcases different aspects with each season, you can fully enjoy the rich blessings of the sea and the charm of Mikuni.

Among the Echizen crabs, there is a special category known as "Imperial Gift Crabs," which are the highest quality crabs that meet both size and quality standards and are presented to the Imperial Family. At Kawaki, you can enjoy specially large Echizen crabs that have lived for over 15 years. When guests arrive, the crabs are boiled fresh, and during the cooking time, they serve a variety of local delicacies from the rich marine bounty of the Echizen Sannomiya area, such as rock seaweed and sweet shrimp. They also prepare sake that should be enjoyed before eating the crab. One cannot help but be amazed by the fresh and vibrant taste of the freshly boiled Echizen crab.
