On Saturday, December 9, 2023, at 11:20 PM, I was exploring the food scene in Sano City, Tochigi Prefecture, and then decided to change locations and headed to Oyama City.
I walked around the Oyama Station area but was turned away from three restaurants due to being fully booked. However, I successfully got a table at Orion Gyoza!
Afterward, I made my way to Sumi Shun on the 1st floor of the Oyama Station building.
Upon entering the restaurant, I was seated at the counter and looked over the menu:

I ordered a total of JPY 1815.
After about two minutes, my green tea arrived, followed by the otoshi (stewed sardines) after about three minutes, and finally the grilled skewers, which took around twenty minutes to be served.
I usually find stewed fish a bit difficult, but these were excellently prepared!
I left the seasoning for the skewers up to the chef, and they brought them out beautifully separated into salt and sauce on a plate. It seems like a simple thing, but many places don’t do this!
The grilling technique was superb. They used charcoal to grill the skewers to perfection.
I personally think grilling chicken skin is the most challenging, but it had a great texture and was delicious.
I’ve disliked shiitake mushrooms since elementary school, but the grilled shiitake was absolutely delightful!
Just kidding.
However, the flavor was concentrated, and when I bit into it, all the umami burst forth!
It filled my mouth with happiness!

The flavor of the Oyamadori was also top-notch.
The only downside was that the oden was nearly sold out, so I couldn't have any.
