The head chef has been dedicated to Japanese cuisine for over 40 years. He started in a sushi restaurant and has experience in kaiseki (traditional multi-course) cuisine. His younger brother is also a Japanese chef, but he trained in a tempura restaurant, making tempura his specialty. They each utilize their strengths to present their dishes.
