One of the three major types of Japanese beef, alongside Matsusaka beef and Kobe beef, is "Yonezawa beef." This beef is raised in the Okitama region, which includes Yonezawa City in Yamagata Prefecture, and only black-haired wagyu that meets strict standards for quality and safety is allowed to bear this name. Among the nationwide shipments of black-haired wagyu, Yonezawa beef accounts for a very small number. In our establishment, we exclusively offer Yonezawa beef that is rated "A5 rank BMS (Beef Marbling Standard) 10 or higher," which represents only 0.009% of the total. Please enjoy the supreme Yonezawa beef that we have meticulously selected.
