The ingredients are all natural and sourced by the owner himself, who visits the market every morning. We pay close attention to the temperature at which each ingredient is best enjoyed, as well as the temperature of the rice. For example, "Toro," which takes time to appreciate its sweetness when cold, becomes a superb piece of sushi when slightly brought to room temperature, allowing it to blend perfectly with the rice. Shellfish is cooked at low temperatures to preserve its texture. Anago (conger eel) is carefully adjusted in temperature to achieve a softer, fluffier texture. Please enjoy the exquisite sushi crafted from our diverse commitments.

The owner comes from a tea-related restaurant in Kyoto, and as a result, the interior is designed to evoke a tea room, with tea utensils placed throughout, creating a calm and serene atmosphere. With only 8 counter seats, you can enjoy a comfortable and special experience while dining without feeling stiff or formal, so please feel free to drop by. Additionally, the tableware is crafted by artisans and has been collected over a span of 10 years. We invite you to enjoy the dishes along with the beautiful tableware.

In addition to sushi, we offer a variety of single dishes that can be enjoyed one bite at a time, just like sushi. We serve a piece of shirako (cod milt) as well, delivered at the perfect temperature for optimal flavor. We also pay close attention to cooking methods and ingredients. For example, by steaming the crab, the extracted essence returns to the crab meat, capturing a richer umami flavor. We use four different types of salt, including salt for the rice, pickling salt, and seasoning salt, to enhance the taste.
