The key to our udon's flavor lies in the quality of the wheat, water, and salt, along with the skill of our chefs.
We carefully adjust the moisture and salt content according to temperature and humidity, mix the ingredients, and then knead the dough with a rhythmic "ton ton" before cutting it to a consistent thickness with a "tan tan" technique.
Through these processes, we create udon that has a unique firmness and a glossy texture, resulting in a delightful "tsuru tsuru" experience.
