The dough is made by hand, one by one. We use pizza flour from the renowned Neapolitan company "Caputo." This is a simple recipe that takes advantage of the flour's characteristics, but we pay close attention to humidity and temperature, allowing it to rest slowly and carefully. We serve it at a perfect thickness that is neither too chewy nor overly crispy. Baked in a Japanese stone oven at 500 degrees on both top and bottom, it allows you to enjoy the freshness of the local ingredients on top and the fragrant aroma of the dough.
Food Homemade "Elastic" Fresh Pasta with Roasted Whole Wheat Flour!
Our fresh pasta is made using roasted germ whole wheat flour, and we do not use any water; instead, we rely solely on the moisture contained in the eggs for the dough. Tagliolini... a thin noodle that pairs well with light sauces and soup pasta. Fettuccine... a flat noodle that clings well to rich cream-based sauces.
