"Soki" refers to pork spare ribs, which are commonly found in Okinawa. It is made with soki, kamaboko (fish cake), and green onions, and uses a Japanese-style dashi made from bonito and kelp, making it easy to eat and perfect for a final dish.

Crispy on the outside! Chewy on the inside! This is tempura made with Okinawan mozuku seaweed. We lightly fry thick mozuku from Miyako Island.
