If you're unsure what to order, we recommend the classic Okinawan dish, "Rafute"! This dish is made by simmering large chunks of pork in a mixture of soy sauce, sugar, dashi, and awamori (Okinawan sake) for about 8 hours. The use of awamori for simmering is unique to the Okinawa region. The meat is so tender that it can be easily cut with chopsticks, and after being slowly cooked, it melts in your mouth. Enjoy the sweet and juicy flavor, along with the subtle aroma of awamori.
