Sake of the Day

DATE Seven Episode V Junmai Daiginjo (Miyagi)

Completely sold out nationwide! Seven breweries in Miyagi have joined forces to create a new unit called "DATE SEVEN"! The seven breweries—Katsuyama, Suminoe, Hakurakusei, Sanwa, Haginotsuru, Miyakanbae, and Ougonzawa—have come together for this project to craft a single sake. Each year, the leading brewery and the roles of each brewery will rotate, brewing one sake each year for seven years. This year, the fifth installment features Suminoe Brewery as the leader, polishing the top-grade sake rice of Miyagi to 30% and using each brewery's carefully selected water for brewing. With a focus on the essence of Miyagi, the sake has been refined to perfection while keeping the flashy elements in check. It's super popular and already out of reach!

Miyakanbai National New Sake Competition Gold Medal Award Junmai Daiginjo (Miyagi)

Our family grows the rice used in our sake by hand, surrounded by rice fields at our sake brewery. This sake boasts a crisp and clean mouthfeel, along with a rich, dense flavor reminiscent of ripe fruits. It has a deep, fragrant aroma and a pristine clarity, making it a special edition of Miyakanbai proudly labeled with "EXTRA CLASS." We recently won a gold medal at the National New Sake Competition!

Kinken Ichi Junmai Genshu Kame no O (Miyagi)

This talented sake has been winning top awards at competitions lately! Made from Kame no O, a junmai sake from Miyagi, it uses locally contracted crops derived from the rice strains Koshihikari and Sasanishiki. The best part? These rice grains are harvested using natural farming methods without any pesticides. Since it's grown naturally, the yield of Kame no O is limited, and with a polishing ratio of 70%, only a small amount is released.

Juyondai Honmaru (Yamagata)

Juyondai is a powerhouse in the sake world, consistently taking the top spot in rankings for the hardest-to-get drinks! Its rich and smooth texture leaves you in awe the moment you take a sip.

Kurikomayama Bessatsu Tokubetsu Junmaishu (Miyagi)

The owner and master brewer Chida from the Kurikoma mountain brewery in the northern prefecture is highly dedicated to his craft, showcasing impressive sake-making skills. This is a special selection, distinctly different from the "Kurikomayama Tokubetsu Junmaishu Muroka." It features a clean acidity with a mineral finish.

Juyondai Hakutsuru Nishiki Junmai Daiginjo (Yamagata)

This is an ultra-rare sake among Juyondai! 'Hakutsuru Nishiki' is an unfamiliar sake brewing rice developed by Hakutsuru Sake Brewing Co., located in Higashinada-ku, Kobe. This 'Hakutsuru Nishiki' was created by crossbreeding 'Yamada Ho', the maternal ancestor of the premium sake rice 'Yamada Nishiki', and 'Wataridune', its paternal counterpart, after about 70 years. Registered as a new variety in 2007 after 12 years of development, it features a gorgeous aroma, a mild and smooth texture, and a fruity and elegant flavor with a clean, delightful finish that is truly unique and memorable.

Yamamoto Akita Royal Straight Flush Junmai Daiginjo (Akita)

This sake comes from Shirataki Brewery, the only sake brewery in Japan that draws abundant natural water directly from the UNESCO World Heritage site, Shirakami-Sanchi. The sixth-generation owner, Tomofumi, grows organic sake rice in terraced fields and personally handles every step of the brewing process, even playing Beatles music to inspire the fermentation. He wants to convey his passion, much like a musician connecting with their audience. This limited edition sake is crafted with five types of Akita yeast (AK-1, No. 6 yeast, No. 12, Komachi R-5, Akita Junmai yeast) and five different types of sake rice from Akita, meticulously added in stages (main sake: Akita Sake Komachi, koji: Gin no Sei, added: Misato Nishiki, intermediate: Kairyou Shinkou, final: Miyama Nishiki). It’s known as "the strongest sake from Akita" or "Akita Royal Straight Flush."

Tachisake Junmai Ginjo Kojo no Nishiki (Aomori)

Renowned for its ultra-rare and high-quality offerings, Nishida Sake Brewery in Aomori is famous for producing Junmai Ginjo made from Kojo no Nishiki, the first sake rice developed by Aomori Prefecture using a crossbreed of ‘Gohyakumangoku’ and ‘Aokei 50’ back in 1968. Though it nearly disappeared due to limited use, Nishida Sake Brewery managed to find and revive the Kojo no Nishiki seeds, and they began selling this exquisite sake as ‘Tachisake Kojo no Nishiki’ starting in 1991.

Juyondai Shirokumo Kurai Junmai Daiginjo (Yamagata)

Juyondai Shirokumo Kurai Junmai Daiginjo (Yamagata)

Here’s a rare gem that you might not come across again anytime soon! This is 'Shirokumo Kurai,' crafted to celebrate the 400th anniversary of the Juyondai brewery. It takes its name from the ancient belief that the rising and departing white clouds bring about good fortune and brilliance. This exquisite Junmai Daiginjo showcases the exceptional skill of the brewers. It’s an unparalleled sake that surpasses even the aged Juyondai Ryusen.

Sake Competition First Place Atago no Matsu Special Junmai Sake (Miyagi)

This sake is a proud winner, taking first place in the Junmai category at the world's largest sake competition, "SAKE COMPETITION 2016"! From the fantastic Hakurakusei brewery, this Atago no Matsu Special Junmai (Hiyori) took fourth place, while Hakurakusei Special Junmai came in seventh! With three brands making it to the top 10 in such a tough competition, it's truly impressive!

Akabu F NEW BORN Nama (Iwate)

The sixth generation, born in 1992, is still in their twenties. They were even a national champion at a sake tasting competition during their university days! Continuing the stubborn artisan spirit, they brew "Akabu" to become a representative Junmai sake of Japan. Most of the brewery staff is also in their twenties, filled with vibrant energy and a serious passion, taking on challenges for the future with excitement! (F stands for For You) This Ginjo type sake encourages you to keep pouring more as you enjoy it. It was crafted with the hope that it would bring smiles and joy to its drinkers. Its refreshing quality, transparency, and vivid flavor profile not only capture the freshness of the new brew but also bring a bright atmosphere to this sake.

Akabu Premium Junmai Daiginjo Tokubetsu (Iwate)

This sake is the masterpiece of Akabu Shuzou, truly an exquisite item. Made with top-grade Iwate Prefecture rice called 'Yui no Kaori,' it is polished down to 35%, fermented at ultra-low temperatures, and carefully wrapped in bags, then stored in elegant tokkuri. It's a bottle that embodies luxury, showcasing the true essence of premium Junmai Daiginjo with its exquisite sharpness.

Sotokebama (Daisyu no Kura) Microbubble White Nama Sparkling (Aomori)

It's just like champagne! This ultra-limited sparkling sake is an upgraded version of the renowned Junmai Ginjo White Nama from Daisyu no Kura, famous for its rarity and high quality. Experience a refreshing, sweet-and-sour flavor with a cool twist, crafted from 55% polished Hanabuki rice grown in Aomori Prefecture. It's a stylish taste!

Tachisake Tokubetsu Junmai Daiginjo (Aomori)

This is the pinnacle of the renowned Aomori's famous Tachisake, known for its high quality and limited availability. With a robust flavor and exceptional crispness, you can truly appreciate the craftsmanship of Tachisake brewery. This ultra-rare sake is released just once a year in November, so you won't often come across it during other times!

Yamawa Junmai Daiginjo (Miyagi)

Yamawa Junmai Daiginjo (Miyagi)

The son of the Kura (brewery) from "Washi ga Kuni" in Kame has graduated from the Brewing Science Department at Tokyo University of Agriculture, and he has launched the Yamawa brand which has recently been winning gold medals at various competitions. And now, incredible news! This year, it took first place in the Junmai Daiginjo category at the sake competition! This sake has a wonderful crispness and a rich, well-rounded flavor that makes it truly delicious. I have a strong feeling that breweries like this will lead the way in sake production for Miyagi in the future.

Hiroki Daiginjo (Fukushima)

Hiroki Daiginjo (Fukushima)

Although it's a small brewery in Aizubashiki, everyone who loves Japanese sake knows the name Hiroki. Until now, Daiginjo sake was generally not available, but this Hiroki is a super rare seasonal release, produced in very limited quantities. It can sell online for tens of thousands of yen! Its flavor boasts an amazing balance with the signature crispness that Hiroki is known for!

Juyondai Gokujou Morohaku Junmai Daiginjo (Yamagata)

Hidakamizukuri Daiginjo Tobin Dori Shizuku Sake (Miyagi)

We were lucky enough to get our hands on a tiny bit of the remaining sake submitted to the Hidakami Sake Competition. It's perfectly balanced and absolutely top-notch. Bottled like this is super rare and usually doesn't leave the brewery. Enjoy this ultra-ultra rare sake!
