The pork fillet for the tonkatsu is made from Niigata Prefecture's snow room-aged pork. It is aged for one month in a warehouse covered with snow, resulting in a concentration of flavor and an astonishing tenderness. The loin from Aichi Prefecture's Tahara pork has no porky smell and is appealing for its melt-in-your-mouth softness! We also offer Matsusaka beef cutlets, a specialty of our restaurant in Matsusaka City. The coating is made with the finest fresh panko specifically for tonkatsu, ensuring excellent oil drainage and a light texture. Enjoy the crispy texture and savory aroma!

Food "Sesame Oil is the Key! Crispy Tonkatsu with Flavor Locked In by Double Frying"
We are particular not only about the ingredients but also about the cooking method. We use a two-step frying technique: first, we lightly fry the food in low-temperature oil, and then we fry the coating in high-temperature oil. This results in a crispy texture and juicy tonkatsu that locks in the umami flavor. We blend only pure white sesame oil and pure roasted sesame oil in a unique ratio for the frying oil. Sesame oil has excellent oil drainage, allowing you to enjoy a light and delicious meal.

The chef is a skilled cook with about 16 years of cooking experience at the age of 32. Utilizing a wide range of culinary experience from Japanese cuisine to Italian, he has opened a second location of the sister restaurant "Katsu Avanti," focusing on tonkatsu as the main dish. This is a tonkatsu specialty restaurant that opened on January 16th in front of Matsusaka Station. We use carefully selected ingredients, including Niigata Prefecture's snow-aged pork tenderloin and A...ichi Prefecture's Tahara pork loin.
Our tonkatsu is coated in the finest fresh breadcrumbs and double-fried in our unique blend of sesame oil, resulting in a fragrant and crispy dish.
