Near Kinkaku-ji and Kitano Tenmangu! Homemade, stone-ground hand-made soba and Kawachi duck dishes.
We grind only the amount of buckwheat needed for the day using a stone mill, adjusting our technique based on the flour's condition. This allows us to have a conversation with the buckwheat flour, resulting in the best soba possible. We use the famous soft water from Kyo-mi-toge in Kyoto for our water and dashi, enhancing the natural flavors of the soba and katsuobushi. |
