ChefKaname Miyatani - The Evangelist of Chinese Cuisine Who Captivates Food Enthusiasts
Born in 1982 and from Shiga Prefecture, I was captivated by the vibrant atmosphere of authentic Chinese cuisine during a training program in Guangzhou, China, at the age of 21. I returned to China at 26 to further my culinary skills. After a year of training, I worked at restaurants in Shiga and Tokyo while preparing to go independent. In 2020, I established a company called "Guu," which offers catering and mail-order services. In 2021, I accompanied Yusaku Maezawa's space travel team as their personal chef to Russia, and I continue to travel abroad frequently as a personal chef.

Among the appetizers that adorn the beginning of the course, the standout is the dim sum shaped like a swan. This signature dish is a unique twist on daikon pie, featuring a remarkable layer of potato dough that conceals blue cheese and apple inside. Next, the xiaolongbao and steamed dumplings are served fresh, as they want you to enjoy them "in the most delicious state." The monthly changing course consists of 8 to 9 dishes, with the same content and price for both lunch and dinner, and additional orders such as fried rice and mapo tofu can also be made.

With a roar, flames leap from the high-powered gas stove, and a massive steamer releases white steam in swirling clouds, while Mr. Miyatani fervently stirs a large pot. The full open kitchen allows for a clear view of everything, from the chef's face to the cooking process, driven by the desire for diners to "feel the heat of Chinese cuisine." Once the course begins to be served, the calm atmosphere of the traditional Kyoto townhouse transforms completely. Diners can experience the vibrant ambiance of an authentic Chinese restaurant filled with energy.

Opened in September 2022 in Nijo, Kyoto, this restaurant quickly gained popularity and is now fully booked for a year in advance. The owner-chef, Mr. Miyatani, holds a rare national certification as a... Chinese chef in Japan and presents a variety of original Chinese dishes that highlight the potential of the ingredients. Utilizing traditional cooking methods, he achieves flavors and textures that cater to Japanese tastes. The counter seats offer a prime view of the cooking process, making it a truly special experience.
