This restaurant is located in a quintessentially Kyoto spot that you couldn’t find unless you knew about it!
The dish I’ll be trying today is called Chadolbagi, a meal that's not widely known in Japan but is commonly enjoyed in Korea.

Chadolbagi is like grilled shabu-shabu in Japan!
You'll cook it on a high-centered iron pot resembling the ones used for Genghis Khan barbecue.
As you order additional servings, you can flow the unlimited dashi soft-boiled eggs around it.
Then, you place beautifully shaped slices of brisket, processed using a unique freezing technique that utilizes electromagnetic waves, onto the center to cook.
By the way, I heard that several years ago, certain frozen foods from a well-known convenience store remarkably improved in taste because they adopted this freezing technology! (Sounds pricey)

It's part of the beef's chuck (the front portion).
It has moderate marbling without being overly fatty, and each bite releases rich flavors!
Coming from fresh Wagyu, it's best not to overcook it—just take a big bite as is.

The special chili, resembling a pepper or shishito, floating in the sauce, has no spiciness but provides a crunchy texture like green onions that I really enjoy!

You can add scallops or topped with pickled mustard greens and even change the flavor with wasabi... everything tastes amazing!
This keeps it from being monotonous, and with the light flavor, you can keep enjoying it!

They serve lunch too, so a quick beef cutlet for lunch sounds great!
Chadolbagi lunch is just JPY 1500—what a deal!
The location is like a hidden gem, it’s picturesque, and the food is fantastic (which is the most important part). It’s totally worth a visit!
Next time, I’ll bring my girlfriend from Gion!
