The original sauce that enhances the deliciousness of the meat uses "hon mirin candy," which is made by fermenting glutinous rice. Not only does it provide a sweetness and umami that cannot be substituted with sugar, but it also gives the dish a glossy and shiny finish.

Owner Sumimura, who honed his skills at a famous restaurant, opened the predecessor of Grill Fukuyoshi, a wagyu yakiniku restaurant called Fukuyoshi, in 1997. Soon after, he encountered a child with a...llergies who couldn't eat hamburgers containing eggs or wheat. This led him to develop a hamburger without these ingredients. After much trial and error, he created the "Melting Hamburger," blending black wagyu and domestic beef to achieve a unique texture. Thanks to the use of domestic beef, he was also able to keep the price reasonable. This carefully crafted hamburger has garnered attention from various media and has won numerous awards, including the Quality Award at the Monde Selection.
