Based on regional dishes from all over Spain, featuring seafood from Mr. Hasegawa of Sakanabito, seasonal ingredients from Kanagawa Prefecture, and aged beef from Shiga Sakaeya. This is a modern classic cuisine version of Anchoa, consisting of approximately ten courses.

In 2021, with the relocation, Ryo Sakai became the owner-chef of the popular Yoyogi Hachiman restaurant, now renamed "anchoa." His dishes, themed around "Spanish regional cuisine reflecting the local culture and traditions," continue to evolve year by year.
