On our way home after finishing work, my wife and I decided to try some mini ramen.
Following my wife's request, our second stop was Hakata Issou, known for its tonkotsu ramen.
We ordered the mini versions of both the seasoned egg and wonton.
I was surprised by how light the tonkotsu broth was.
I requested the noodles to be at a regular firmness (which they refer to as "regular" here).
The thin noodles paired perfectly with the broth, and I ended up drinking every last drop.
The soup was simply astonishing.
I can't even imagine how it's made.
As a bonus tip, the chopped pickled ginger complemented it very well.
Next time, I want to go for the regular size and add an extra serving of noodles to really fill up!
