Food "Connecting with Producers Who Create Innovative Sushi"
Mr. Ikawa's sushi not only features surprising innovations but also showcases the genuine deliciousness of the ingredients. Rather than relying on local markets, Mr. Ikawa looks to ports across the country, and when he finds a producer of interest, he promptly goes to meet them. Sometimes, he even goes out to sea with the producers to check on the bleeding process and the condition of the fish. The deliciousness that Mr. Ikawa creates stems from his connections with producers nationwide.
Food "An Array of Snacks That Will Delight Sake Lovers"
Not only does Mr. Ikawa showcase his creativity in sushi, but he also excels in creating appetizers. By finely grating his homemade karasumi (dried mullet roe) and sprinkling it over white fish, he adds a depth of salty flavor. The mild, plump texture of the white fish combined with the complexity of the karasumi calls for sake. One of the charms of "Sushi no Kura" is that each visit offers a chance to encounter new appetizers born from Mr. Ikawa's curiosity.

Despite having only four seats, the selection of sake is surprisingly extensive. The owner, Mr. Ikawa, has carefully chosen exquisite sake from across the country, including "Hiroki" from Fukushima Prefecture and "Sawayamatsumoto" from Kyoto Prefecture. He makes suggestions that enhance the flavors of the sushi and snacks to match the customers' orders.

The gently warmed shirako fills your mouth with a creamy taste, free from any off-putting flavors, while the squid, grilled with a soldering iron, offers a delightful variety of textures.
