岐阜に旅行にいった際、利用させていただきました。完全個室があったのでそちらを予約させていただき、横並びで夜景を見ながらフレンチを食べるという企画だ。
着いたのはまだ18時で陽が落ちてない時間だ。陽が沈み、夜景が浮かびあがってくる変化も楽しみたかった。変化と言えば、ここはパンに使うオリーブオイルに注射器を使うなど面白い工夫が見受けられた。コースは一番いいやつにしたが、高くない。都内に比べたら圧倒的に安く、空間も含めて考えるとコスパはかなり高い。
1.海の幸と岐阜県産トマトのエスプーマ
最初の一品でこれはあがる。贅沢にキャビアも乗せてある。エスプーマと聞くとエルブリを想像するが、ムースと海老が口の中に淡く広がり、美味しい。
2.岐阜県産鮎のコンフィ 枝豆の焼きリゾート
長良川で採れる地元を鮎のコンフィを、その煮干しで出汁をとったコンソメとともに。岐阜に旅行気分を盛り上げる。
3.ハンガリー産のファグラのポアレ
冷たいスープに浸したファグラをグリオットチェリーをラッケして軽い甘みとともに。とうもろこしのフランがかわいい♡
4.長崎県産いさきのポアレ
岐阜には海がないから魚料理は岐阜県産でないのはしょうがない。そら豆のピューレとレモンクリームのスープであっさりいただいた。
5.飛騨牛のロッティ ボルト酒のソース
岐阜に来たなら飛騨牛は絶対に食べたかった。キャラメリゼしたあり、飛騨牛の旨味を引き出してくれる。美味しかった。
6.熟成メロンのデッセル
美味しかった。
陽が沈む眺めながら、美味しい料理を自分たちだけの空間で楽しみ、メインが近づくに連れて、濃尾平野に広がる夜景が浮かびあがってくるのは旅行気分に手伝って、最高に優雅なひとときであり、そんな瞬間をこの値段で提供しているフォーティースリーは素晴らしいお店だと思う。
岐阜を訪れた際は、瞬間の焼き直しでもいっこうに構わないので再訪したい。
