Since its founding in 2004, the ramen at Hakata Ikko-sha, crafted by the head chef Yoshimura Kosuke, adheres to the "aged earthen pot reboiling method." Using two large earthen pots, the ramen is made by continuously adding young broth to the matured soup, resulting in authentic Hakata tonkotsu ramen that can only be created by skilled Hakata ramen artisans.

Traditional tonkotsu ramen features a thick layer of fat that floats on top when the pork bone broth is simmered. We have succeeded in transforming that fat into "foam." When you see this foam, think to yourself, "It has a strong bone flavor" and "It's a sign that the broth is in good condition." The rich umami and sweetness of the pork bones resonate powerfully, showcasing the classic appeal, while also offering a new taste that is "creamy yet has a light and sharp finish." This is the deliciousness that only the "original foam style" can provide, combining the best of both worlds.
Food "The True Ramen Shop is One That is Particular About Its Noodles"
"Only by making the noodles for ramen ourselves can we truly call ourselves a ramen shop." With this belief, we started making our own noodles in 2008. Instead of the traditional thin noodles that have a chewy texture and a powdery taste, we have created a unique noodle that, while still thin, allows the rich aroma of wheat to spread beautifully, offering a delightful chewiness and a supple firmness. We also considered the bite and compatibility with the soup, and by cutting the noodles slightly flat, we designed them to better lift the soup.

The secret to the flavor of Hakata Ikko's broth lies in its rich and lingering aftertaste. The special sauce, known only to the founder Yoshimura Kosuke and the artisans of the long-established Yamataka Soy Sauce, which has been in operation for over 120 years, is a closely guarded recipe. By carefully crafting "re-brewed soy sauce" and adding multiple seafood broths, the complexity and flavor are enhanced. By removing the sharpness of the salt, a mellow taste is brought out.
