At our establishment, our professionals, who have extensive knowledge of meat, hand-cut each piece while assessing the hardness, tenderness, muscle fibers, and grain direction of each part. Just like at our main store, we knead the buckwheat flour by hand after receiving an order to make the noodles. Additionally, the "Daitoen Hanare Course" (5,000 yen excluding tax), "Akami Course" (7,000 yen excluding tax), and "Chef's Special Course" (9,000 yen excluding tax) are also excellent options.
