Food "Boiling Freshly Ground Soba with Every Order"
Our soba is made with carefully selected buckwheat flour. The state in which soba is said to be the most delicious is "freshly ground, freshly made, and freshly boiled." Since buckwheat flour oxidizes during storage, we grind it daily using a stone mill set up in our shop. We make the noodles in-house from that flour and boil them fresh each time we receive an order.
