Born in Aichi Prefecture in 1954. From the age of 16, he left his hometown to hone his skills in Osaka. Based on the belief that "humans should eat what can be harvested within a seven-mile radius of where they live," he uses local seafood and vegetables in his cooking. He does not prepare any dishes in advance, offering only freshly made delicacies. With over 50 years of experience as a chef, he and his wife have managed their restaurant, "Hanaichi," for many years, continuing to be loved by long-time regulars. "Hanaichi" received one star in the "Michelin Guide Aichi, Gifu, Mie 2019 Special Edition."

The dishes at "Hanaichi" are filled with comforting flavors that make you feel at ease. The bounty of the sea and the mountains is transformed into exquisite dishes that, while simple, offer deep and rich tastes. The classic "dashi-maki" is so full of broth that it seems like it might fall apart when you pick it up with chopsticks. There are also many seasonal specialties that evoke the changing of the seasons, such as the summer "kakuya" and the winter "hitashi-mame." To conclude a feast, the signature dish "tenmusu," which features freshly fried shrimp gently wrapped in rice, is a must. You will want to fully savor the assured deliciousness.

The shop, renovated from an old traditional house, has no noren (fabric dividers) or signboards. Only a wooden plaque inscribed with "Fushoku Fumai" in vivid ink is displayed, allowing it to blend seamlessly into the residential area. The pure Japanese-style space, overflowing with Taisho romance, features tatami mats, sliding doors, and shoji screens, all exuding charm and evoking a comforting sense of nostalgia. Time-worn furnishings such as a medicine chest, a bath bottle, and a chabudai (low table) welcome guests, inviting them to ponder the weight of history—a delightful experience in itself. It’s a place you’d want to keep secret, a hidden gem.
