On November 1, 2022, the meat restaurant "Shabu Shabu and Yakiniku Waniku" opened on the 4th floor restaurant area of Midland Square. The elegant interior, illuminated by soft lighting, features 32 table seats, 4 counter seats, and 9 private rooms with a total of 46 seats. While it has a high-end feel, it is also reasonably priced for everyday use. Please take your time and enjoy the calm and refined atmosphere.
Others Enhancing the Umami of Wagyu: Carefully Brewed Dashi from Rausu Kombu
In our wagyu shabu-shabu, we luxuriously use high-quality kombu from Hokkaido, known as "the three great dashi kombu," specifically Rausu kombu. We slowly and carefully simmer the coarsely shaved Rausu kombu, combining it with fragrant katsuobushi to enhance the aroma. The result is an amber-colored dashi with a rich, deep flavor and a luscious fragrance. This perfectly complements our carefully selected premium wagyu, further enhancing the inherent umami of the beef.
