Meatball consists from various component. Meatball was made from 150 grams of beef; 26.3 grams of tapioca; 46.5 grams of ice cube; 0.6 grams of sodium tripolyphosphate; 9 grams of salt; 3 grams of garlic powder; 0.51 grams of nutmeg powder; 3 grams of sugar; and 8.28 grams of cooking oil. There was 4 steps for making this meatballs. First, the beef was destructed, then mixed the beef with the spices, then mold the meatball dough, and last the dough was cooked in two different temperature, first 36 o C, after that 90 o C. Sensory test was done to 30 untrained panelists, and rate the meatball from its color, appearance, flavor, taste, texture, and overall meatball. Based on sensory test, the meatball that has been made was quite good. The average of the test was 3.63 on color; 3.5 for appearance; 3.2 for flavor; 3.83 for taste; 3.6 for texture; and the overall meatball was 3.6 I.
