I do have to wonder though, what sorts of differences in cooking and flavor there might be with food made by furs with a different set of tastes? Would they use more or less spices and such?

Cats and dogs have far fewer taste receptors than do humans. That could explain how they can eat rotting possum, and we can't. Well, mostly, anyhow.
