Homemade Chicken Ramen
INGREDIENTS
2 boxes Chicken Broth
24 oz water
1 package Chicken Tender Strips (no breading, about 6-7 tenders)
1 box thin spaghetti (pot sized)
4 oz fresh diced onion
4 oz fresh diced tomato
1 package frozen onion
2 stalks Green Onions, diced
2 stalks (per bowl) green onion NOT DICED, but cut to 6-8" long (rest can be diced like above)
1 hard-boiled egg (per bowl), cut in half
1 hard-boiled egg, diced
Salt
Pepper
Garlic Powder
COOKING
In medium to large Crock Pot, put frozen onions, fresh onions and fresh tomatoes, then add one box chicken broth. Simmer on Low for 10 hours. Add 24 oz water so onions and tomatoes don't burn halfway through. Reset timer for another 10 hours on Low. Add 2nd box of chicken broth, thin Spaghetti noodles, diced green onions, chicken, egg, salt, pepper and garlic powder. Reset heat to High for 1 hour so noodles and chicken can cook.
SIDE PREP
During last hour, cut the 6-8" green onions along the green part in half, then in half again, LENGTHWISE. This makes the green curl down and look like "hair". Also cut the eggs in half for each bowl being served.
SERVING
1 chicken tender, cut into smaller bite sized chunks goes into each bowl, then add the noodles and soup to the bowl. Place two egg halves into the bowl, then two green onions. Enjoy.
