Eirene's Recipes - Hawaiian Tilapia

Hawaiian Tilapia
Ingredients
1-2 filet(s) of Tilapia (white fish)
1 small can (6-8 oz) pineapple juice
1 small can (2-4 oz) crushed pineapple
3 tbs brown sugar (I used light)
1/2 tsp ground ginger
2 tsp dry mustard
3 tbs soy sauce
1 tbs crushed garlic (with garlic juice)
1 8 oz package coconut flakes
(double ingredients for more tilapia filets)
Preparation
In a large bowl, mix pineapple juice, crushed pineapple, brown sugar, ginger, mustard, soy sauce and crushed garlic. Submerge filet(s) into mixture and marinate for at least 30 minutes. Preheat oven to 350 degrees.
Cooking
In a roasting pan (13x9x2, with toasting sheet), put the tilapia in the bottom, then pour marinade over it/them. Put the filet(s) into the oven for 15 minutes. After 10 minutes, add toasting sheet, filled with coconut flakes, and toast them for the last 5 minutes.
Serves 1-2 (or more if you've added more filets). Goes well with asparagus (or green beans) and rice.
