Here's a size chart and the growth-progression of a wolf type hybrid.

I also am rather curious to learn more about what happens at the "end" of their life. It appears that they don't die in a manor of expiring, but that the symbiont part weakens, and the lusus is no longer suppressed in the hybrid's body. I'm guessing that the lusus slowly takes over and merges with the hybrid.
If (big if there) that is correct, then it begs the question on what happens next. Does the hybrid mind merge with the lusus, overwhelming the human/symbiont consciousness? Or does the lusus grow unchecked, killing the hybrid? Just guessing here as I wonder about Lilia's fate, and the fate of Vilkas and his parents and pack when they eventually grow "too" old.
What will happen over the years though are some quite significant internal changes.
For example, if Vilkas was stabbed then it would be quite a serious ordeal, he'd bleed, his internal organs could be damaged, he won't die from it but he'll be crippled for a while.
Vilkas father on the other hand would merely frown at being stabbed, it'll hurt but two hours later he'll be healed.

Chapter 8, Vilkas father mentions that he's 230 kilos which is a fair bit from 280.
Hybrids adapt to their environment, Vilkas father spends most of his days in a chair at RIWER thus his body has taken on a more 'civilian' look, if he visited or worked beyond the wall for an extended period of time then his body would adapt and grow. (Height rarely differs)

I'd rather not explain too much as the story will explore these matters later, i can say this though, no sane hybrid would willingly see the end-stage come to fruition, both for the sake of others and the self.
Thanks for clarifying they stop growing (size and height) after 3 years. Do the internal changes after 3 years include increasing strength, agility, and mental focus? If the mental focus improves, does that extend to improving usage of mindscape and waldo? Or is the power and ease of using mindscape and waldo improve simply from their hybrid adaptation to what they encounter in their environment? I hope I'm not pestering you too much with my curiosity! *grins*
Aptitude with the mindscape is dependent on four things...
1: Symbiont Genetics (This sets core abilities and potential, which is improved by new designs)
2: Human Genetics and brain layout (This is the wildcard, some are lucky, some aren't, those born from the artificial womb has an increased compatibility)
3: Maturity (Modifications to the brain takes time, that's why even short exposure to the mindscape is so tiring and even painful to Vilkas and the others)
4: Training (Training allows one to reach the potential set by the first two)
Almost all hybrids can enter a mindscape forum and debate ideas/politics with ease, very few can control and submerge themselves in an army of drones or make full use of the nanite hardware.
This is seriously a great story and I've enjoyed reading it and I'm looking forward to each new chapter.
Chapter 17 (latest) plays out in October and means that Vilkas should be around 150 kilos which is the middle stage at around 1 year.

Is 250 cm the measure of the biggest alphas specimen or the average? You did not give range.
How much a difference on average in both size and weight should we expect to see between an average alpha vs his beta and lower-ranking male in a pack?
Has anyone attempted to do an outline without the fur.. Or was it they tried and did'nt survive the attempt :)
Nope, haven't spent the time to make one without fur. (While I did give art a try, I was never any good at it)
Might make something for the future, I'm just far too bogged down with the weekly releases of Walls 2.
