The choice of the olive tree is essential for many reasons. Olive growing is the most important arboriculture in the Mediterranean, occupying 13 million hectares (compared to 3.8 million for viticulture), (Anglès, 2016: 13), thus participating in the life of 10 million essential farms in this area, at the heart of territorial issues.
