Despite its critical role in determining the viability of food service establishments, little empirical studies have attempted to link food safety to choice of eating places especially in non-western societies. Using the University of Cape Coast as a case study, data was collected from a randomly sampled 1106 students and analysed with the binary logistic regression. The study revealed that students who were concerned with food safety issues have higher tendencies of eating from restaurants than unorganised food service establishments (bush canteen) despite its high price tags. The study therefore concluded that food safety concerns determine the choice of an eatery.

The data used for the study were obtained from individuals who were either purchasing or consuming street foods in the Market Circle in August of 2011. The results revealed that the average consumer makes use of street foods six times in a week and there was a penchant for carbohydrate based foods over other types of street foods. Reasons including cost saving, convenience and eating on credit were noted to underlie the consumption of street foods in the area. Based on the findings, it was concluded that the high consumption of street foods in the Market Circle was for reasons other than nutrition and health.

However, little attention has been paid to understanding leisure constraints within the context of educational institutions in developing countries. This study was based on a case study of 1160 randomly sampled students from the University of Cape Coast in Ghana. The results show that students were inclined towards sedentary leisure activities. The major constraints encountered by the students were interpersonal. Specifically, female students encountered more interpersonal constraints than their male colleagues, younger students encountered more interpersonal constraints than older ones and lastly, students with less income were more constrained by intrapersonal constraints than those with high income. Implications for improving students’ leisure participation are discussed within the perspective of university settings in developing countries.

Hotels in Ghana are engaged in one form of outsourcing or the other. However, little is known of what actually happens in these hotels as existing literature on the subject matter is from the perspective of Western and Eastern industries. It is for this reason that the study set out to explore how hotels in the Accra Metropolis of Ghana employed outsourcing as a business strategy. The study specifically sought to examine how managers understood outsourcing, the activities outsourced, the reasons for outsourcing and the challenges faced by these hotels. The findings indicate that outsourcing is well understood and although there are important reasons for outsourcing, there are also teething challenges that must be overcome if outsourcing is to become a strategy of choice in the hotels.
