This editorial introduction first goes back to the emergence of the notion of social innovation, dedicated to including other processes, actors and purposes. It reminds us that the notion has been shaped by the crises that faced societies from the 1970s and presents the two fields of research that have anchored the notion in different theoretical positions. We highlight how the food and agricultural sector illustrates the three current meanings of social innovation, despite the fact that the general literature on social innovation usually focuses only on a few types of initiatives. We explain how the papers of this special issue demonstrate that agriculture and food represent an exemplary empirical terrain to push forward thinking in the field, such as the need for a better understanding of 'social innovatio...

Focusing on the exchanges of advice between managers, our study is based on 31 cooperatives in southern France. Using both sociometric and economic data, we find correlations between cooperatives' relational, innovation and economic scores. The cooperatives' specificity, however, questions the results obtained in different settings. The network analysis may thus ground a comprehensive interactionist approach to cooperatives, but may also offer tools to renew their governance strategies.

Based on the contribution of economic sociology, this paper shows to what extent and how these supply chains functioning as markets promoting social links may integrate marginalized social positions identified through preliminary bibliographical and survey work. Based on a longitudinal analysis of social networks and life narratives, the research reveals three types of relational dynamics favoring the integration of excluded people. This leads to an examination questioning short food supply chains as tools for sustainable social development. (JEL: Z)

Much more than a fashionable notion or buzzword, innovation has become a key issue for companies,... more Much more than a fashionable notion or buzzword, innovation has become a key issue for companies, policies and, more generally, society. In the Global North as in the Global South, innovating, i.e. introducing a novelty in an economic and social environment, appears more than ever as a factor of competitiveness for enterprises, leading to cost reductions, improved productivity or product quality, or the creation of new markets in a context of globalized competition (Porter and Heppelmann, 2014). In an extension of Schumpeter's (1934) work, innovation is more widely reaffirmed as a source of macroeconomic growth, at the heart now of a 'knowledge economy', deriving value from creativity, learning and communication (Foray, 2004; Stiglitz and Greenwald, 2014). It is also put forward as a solution to the problems generated by economic development itself, especially in the ecological, energy and food fields, leading to what Callon et al. (2015) call a regime of the economy of techno-scientific promises. Finally, across frontiers opened up by new technologies, in the digital and biotechnology fields for example, innovation is envisaged as the possible catalyst of a more radical social transformation, moving the world towards increased knowledge sharing (Rifkin, 2011), transhumanism (Ferry, 2016) and a break with the current forms of capitalism (Latouche, 2006). Of course, critical points of view question this craze for innovation (Godin and Vinck, 2017; Petit, 2015). Both creative and destructive, innovation can lead to social exclusion, destroy jobs and businesses, result in monopolies and misappropriations, and generate new technical and societal risks that need to be understood and addressed (Joly et al., 2015; Temple et al., 2018). But these critics often end up relying on the notion of innovation itself to suggest, or sometimes rehabilitate, alternative paths or avenues of resistance, for example through innovations qualified as 'social' or 'frugal'. Whether in the scientific, political, industrial arenas, or more broadly those of entrepreneurship and the media, innovation appears as a notion that is open to analysis, encouragement and criticism regarding societal changes. But it is also capable of underpinning the transformations of our contemporary societies. This primacy of innovation seems to have won over every corner of society, attracting attention, debate and engagement in all its economic sectors. It is in this context that this book presents contemporary perspectives on innovation in one of these sectors: agriculture and food. Several books and collection of studies have helped shed light on the issue of innovation in agriculture from different disciplinary and geographical perspectives (

Considering SFCs as economic organisations, we propose an analytical framework based on New Economic Sociology and Convention Theory, enriched by Social and Solidarity Economics, to capture the social construction of new economic models in such chains. We apply this framework to two case studies: an open-air market promoting short food supply chains in France, and a partnership between an agricultural cooperative and several solidarity purchase groups (GAS) in Italy. Analysing the trajectories of the two initiatives, we highlight the processes through which new economic models are jointly built via interactions between different actors. Our results open two lines of discussion: one concerning the 'new economic models' that emerge from the two cases, a second regarding the actors' participation in elaborating and enacting these new models.

Are local food chains more sustainable than global chains? In the context of market globalization and the proliferation of local alternatives, these questions have taken on a new aspect, which has been addressed by the GLAMUR (Global and Local food chain Assessment: a Multidimensional performance-based approach) project. Using an analysis of three archetypal wine chains in the south of France, and considering food chains as embedded social constructions, we will first attempt to objectivize which aspects of wine are local, and which are global, using a multidimensional analytical approach. As local vs. global characteristics seem to be strategic assets or constraints, and not structural components, we will then outline an evaluative approach to wine chain sustainability by valuing qualitative indicators to be scored and benchmarked by experts. We will discuss our findings from a scientific and operational perspective by highlighting how a local vs. global approach produces new sustainability issues and practical solutions. Nevertheless, as concrete chains often mix global and local characteristics, further research must be done in order to assess how this combination may be sustainable for different types of actors, depending on their values, capacities, networks and constraints.

Less or no gluten sensitivity have been reported by some consumers of these handmade products. A current participatory project proposes to inventory such initiatives in Occitanie region, to describe their farming systems and to evaluate the quality of pasta. The first results showed that on-farm processing and marketing are mostly the fact of smallscale organic farms growing landraces durum wheat varieties and other orphan Triticum species. Stone-milling is mainly used instead of roller-milling and the pasta process is soft, simpler but longer than the industrial one. The raw materials
