Rename toText to clearer function names

Also make it a normal function instead of `HasField`

So:

sortBy.toText -> sortColumnName sortBy
sortOrder.toText -> sortOrderClause sortOrder

Also:
sortOreder.op -> sortOrderOperator sortOrder
