Description
This PR updates the Astro and Starlight dependencies in the docs to the latest versions, upgrading from Astro 6 to 7 and Starlight 0.40 to 0.41. This upgrade also migrates custom unified plugins to Sätteri, but I kept the Markdown formatter stuff in unified because Sätteri can't convert back to Markdown from MDAST. However, since this is development scripts only, it doesn't affect the Astro pipeline.
