Code Review

This pull request updates Rspress and its related plugins to the stable 2.0.0 version, moving away from the release candidate. It also includes an update for @rsbuild/plugin-sass. The changes are mostly in the dependency files (website/package.json and pnpm-lock.yaml) and look good overall. I've pointed out a minor issue regarding React version mismatch which is a side-effect of this upgrade. Addressing it would improve the project's dependency health.
