The current PHP version bundled in the docker image is PHP7.
PHP7 has reached end of life a while ago, let's update at least to PHP8.

I understand from #504 upgrading to higher than 8.0 might be a bit difficult.
Following the plan laid out at #504 (comment) , this task aims to upgrade the PHP version to 8.0.
