📝 Description

Stop 1.9 support:
Remove if sys.version_info.minor ==9 to install the correct protobuf version for Python 3.9 from all the tutorials with it

Bugs:

1. in 05-model-monitoring.ipynb replace ! with %when installing, evidently, so the kernel will restart automatically to prevent the need to restart the kernel manually (found this bug while running)
2. Add a commented line and documentation in tutorial 5 to prevent this bug: https://iguazio.atlassian.net/browse/ML-11780
3. found that if I run tutorials 1-7, delete the project but not the YAML, and run genai tutorials set_source() pops an error. This function is not needed (tested), so i removed it in genai1-2
