Updated Elasticsearch version information and installation instructions. Updated memory optimisation settings based on what ES recommend their certified engineers setup for customers.

Updated Elasticsearch version information and installation instructions. Updated memory optimisation settings based on what ES recommend their certified engineers setup for customers.
I've removed references to Elastic 6.x as that is long since EOL and we really shouldn't ever suggest folks to run it. 8.x and 9.x seem to work fine from my own testing and running it in production.
