I think there are some terms that are acceptable (e.g. backend), but I think the most modern and adequate term is actually service. So very happy to use it really everywhere and avoid confusion.

Outside of the introduction/overview, this is the only mention of the word "server" in the entire GraphQL spec. Since the paragraph opens talking about GraphQL services, let's use the term service here for consistency.
